he's not holding it by the gills. He is actually holding it by the gillplate on the outside and ventral part of the lower jaw ( a space where there are no gills). It is a very safe and none harming way of fixating a pike. Preferably with a combination of holding it under its abdomen aswell, but for a short moment or suspending in water there shouldn\t be any problem. The only danger is to yourselve, when your knuckles scrape along the sharp edges of the gills.
